- 2013 Foundation: The business officially began in 2013 when the founders made their very first batch of cheese at the University of Minnesota St. Paul Pilot Plant.
- 2014 Expansion: By the end of 2014, they expanded by building their own dedicated cheese-making facility directly on their family farm, Jer-Lindy Farms.
- The Process: Their signature "Ridiculously Good" cheese is the culmination of years of intense study, cross-country trips to artisan cheese plants, funding campaigns, rigorous testing, and continuous sampling.

II. Handcrafted Cheese Lineup
A. Aged Cheeses
- Lucky Linda Clothbound Cheddar: Their best-selling, flagship English-style cheddar. It is savory, rich, firm, and lacks the typical sharpness of standard American cheddars.
- Margie Clothbound Cheddar: An American-style cheddar aged for at least 6 months in their on-site caves, featuring a tart, firm, and sweet profile.
- Red Temper Honey Chipotle Cheddar: A marbled cheddar blended with honey and chipotle to deliver a warm, spicy, and creamy flavor.
- Simply Cheddar: A classic, no-nonsense plain cheddar.
- St. Anthony: A unique original cheese named after the Saint of Lost Things. It is washed in MN-14 whiskey from Panther Distillery in Osakis, MN, resulting in a savory, salty, and meaty taste.
- World's Only Clothbound Garlic Cheddar: Originally crafted for the MN Garlic Festival, this intensely garlicky cheese became a permanent fixture due to high demand.
- The Barbarian: A robust, 1.5 lb cheese wheel specifically made to fit a girolle cutter to create decorative cheese florets. It shares similarities with the St. Anthony flavor profile.
- Cotija: A crumbly, milky Mexican-style cheese often called "Mexican parmesan," ideal for elote, tacos, and salads.
B. Semi-Soft / Soft Cheeses
- Ridiculously Good Cheddar Cheese Curds: Extra-large, squeaky, fresh curds made and bagged completely by hand.
- Little Lucy Brie: A small, fan-favorite brie that is buttery, smooth, and grassy. It is designed to be eaten within 12 weeks of its "Born On" date.
- North Fork Whiskey Washed Munster: A French-style Munster washed in Panther Distillery's MN-14 whiskey. It is funky, robust, and soft enough that the top can be sliced off to scoop the cheese out at room temperature.
